Aebleskiver
Although I had never eaten any or even seen them, I made them at older daughter's home for family breakfast. We bought the cast iron pan in Tyler MN, home to Danebod and a Danish settlement, much like Danevang where husband grew up. First I seasoned the pan, then made batter from easiest recipe. The trick was finding facsimile to a metal knitting needle for turning them. My most successful choice was a toothpick, but oh so hot over the stove. I used sweet fillings of fruit and later chocolate. Savory attempts were two different cheeses, mild and peppery. I may make these again, but note that comfortable shoes are a necessity for obvious reason. So is the cooler winter season.
